They are perfect for those busy or lazy nights when cooking seems like too much of a hassle. Here are some of my favorite Costco dinner ideas that you can quickly whip up whenever you’re in a pinch.

1. Costco Meatloaf with Mashed Potatoes
My go-to Costco prepared meal is the Costco meatloaf and mashed potatoes. I like that it’s so easy to prepare—just heat in the oven and serve. It’s so convenient, and at just $3.99 per pound, it’s an absolute steal. There’s no need to spend hours in the kitchen when everything is ready to heat and serve. It’s a perfect dinner for when I’m too busy (or lazy) to cook.
2. Rotisserie Chicken with Mac & Cheese
One of my favorite prepared foods from Costco is their Rotisserie Chicken. First of all, you can’t beat the price. It’s a steal. And it’s truly for lazy weeknights because I don’t even have to heat it up! I can just pick it up from my local Costco right before dinner.
I like to serve it with Costco’s Mac & Cheese, which my kids love. I love it too because it has a hint of garlic seasoning (I’m guessing, it’s garlic). In my opinion, it’s better than your average mac and cheese.
3. Costco Chicken Street Taco
Costco’s Chicken Street Taco kit is a perfect go-to meal for my family on busy weeknights. This kit includes all the necessary ingredients- chicken, tortillas, cheese, cabbage topping, salsa, crema, and even lime to add an extra zing. It’s a quick and easy Mexican dinner that tastes delicious and is a complete meal in itself.
4. Yakisoba with Potstickers
If we’re ever in the mood for an easy last minute Asian dinner, I like to serve the Ajinomoto Yakisoba with Ling Ling potstickers. I always stock up on these frozen foods from Costco, since they are easy to prepare and make for a great last-minute dinner.
The Yakisoba is easy to prepare—just microwave and serve. The Ling Ling potstickers require some cooking. I usually pan-fry them, and my kids love them. It’s a simple weeknight dinner.
5. Costco Chicken Alfredo
The Costco chicken alfredo pasta is another go-to weeknight dinner for my family. My kids love the pasta so much, they can eat it every day! The best part is, it already comes with chicken, so it’s a complete meal. All I have to do is heat it up in the oven and serve it. It’s the perfect dinner for those lazy evenings when I don’t feel like cooking.
6. Chicken Tikka Masala
Sukhi’s Tikka Masala is one of my favorite Costco meals. I always have a pack in my fridge for those lazy weeknights when I don’t feel like cooking. I simply heat it up in the microwave and serve it with some rice. I have a rice cooker, which makes cooking jasmine rice a breeze with just the push of a button. It’s perfect for an easy, hassle-free weeknight dinner.
7. Costco Pizza and Mozzarella Sticks
Whenever I have nothing planned for dinner, and I’m at Costco, I always order a Pepperoni pizza from the food court. The best part is the unbeatable price of only $10! My son can’t get enough of it and could eat it every day.
Whenever I serve it, I like to pair it with some delicious Petite Cuisine mozzarella sticks, which I also get from Costco. They come frozen, I just pop them in the air fryer for 8 minutes, and they’re ready to go!
8. Roast Duck and Pierogis
When I want to make dinner a little more special, I like to serve roast duck. I usually buy the Maple Leaf Farms Roast Half Duck from Costco which is fully cooked. All I have to do is heat it up in the oven, and it’s ready to serve.
To complete the meal, I serve it with Kasia’s Potato and Cheese Pierogi, which is also available at Costco. The pierogies are easy to prepare – just pan-fry them for a few minutes, and they’re done. My kids absolutely love this meal!
9. Dungeness Crab
My husband and I are big fans of the Dungeness crab from Costco. It’s not only delicious but also a great value at $8.99 a pound. I just heat it in the microwave for a couple of minutes, and it’s ready to serve. I serve it with salad, it’s an effortless and quick dinner for a busy weeknight. However, my kids are not very fond of it, so I usually make something else for them. Typically, I serve the chicken alfredo pasta from Costco, which they love.
10. Salmon Dinner
I rely on Morey’s Salmon for quick and easy dinners on busy weeknights. The salmon comes frozen and is already pre-marinated, making it a hassle-free meal. I always keep a box of it in my freezer for last-minute dinners.
Although the salmon needs to be defrosted beforehand, it’s easy to do so. If I forget to defrost it the night before, I can easily thaw it in a bowl of water for 30 minutes. Once it’s defrosted, I heat it up in the oven and serve it with rice and salad. My kids can’t get enough of this salmon!
If you don’t want to use frozen salmon, you can always buy Costco Stuffed Salmon or Salmon with Basil Pesto Butter. These are easy to prepare; just heat them up in your oven.
11. Carnitas Tacos
I’m a huge fan of Del Real Carnitas from Costco. They’re refrigerated, so you don’t have to worry about defrosting them. Plus, they’re fully cooked, which makes them perfect for last-minute meals.
Personally, I like to pan-fry them until they’re crispy and golden brown. That way, I get all those delicious burnt ends!
To complete the meal, I usually serve the carnitas with tortillas and taco shells. As a topping, I serve it with Kirkland’s organic chunky guacamole, also from Costco. It’s the perfect meal for lazy weeknights.
12. Chicken Quesadilla and Shrimp Cocktail
When I’m feeling really lazy, my go-to dinner is Costco’s chicken quesadilla. It’s ridiculously easy to prepare; just heat it on a pan or microwave it. It’s a complete dinner kit with guacamole, salsa and sour cream.
To make the meal a bit more special (or if I’m feeling a bit guilty about serving such a lazy dinner), we start the meal with some shrimp cocktail from Costco!
13. Shrimp Tempura and Fried Rice
Shrimp tempura and fried rice are the perfect lazy Costco dinner when you’re not in the mood to cook. You can easily air fry the shrimp tempura—for 8 minutes, and they will come out crispy. It even comes with the tempura sauce.
The fried rice is even easier to prepare, just microwave for 3 minutes and you have Japanese fried rice!
14. Ribs with Mashed Potatoes
If I’m feeling extremely lazy then an easy go-to dinner are these Costco ribs. They are already cooked! No prep required. For sides, I usually toss a salad- the Costco Caesar salad is perfect with it. If I’m in the mood for mashed potatoes, I just grab the ready-to-heat mashed potatoes from the refrigerated section at Costco.
15. Tortelloni with Marinara Sauce
When I’m in the mood for a red sauce pasta dinner, my go-to dinner are these Kirkland Five Cheese Tortelloni. This fresh pasta cooks up fast, and when I pair it with Rao’s Marinara sauce, it’s simply delicious. It’s my favorite go-to dinner for those lazy weeknights when I want something easy. It’s also kid-friendly too!
16. Pasta with Meatballs
Another easy red sauce dinner is Costco’s pasta with meatballs. Just pop it in the oven and dinner is ready. Add some vegetables, serve it with a bag of salad from Costco.
