Westchester Michelin Restaurant: Dubrovnik

Dubrovnik has been getting a lot of buzz lately as one of the recipients of the Michelin Guide Bib Gourmand award. Only 8 Westchester restaurants received that recognition. Dubrovnik opened 6 years ago and is the only Croatian restaurant in Westchester. Dubrovnik’s executive chef, Antonio Selendic sat down with Suburbs 101 to tell us what to order at Dubrovnik during restaurant week.

How long have you been working at Dubrovnik?

I’ve been working as the executive chef for 5 years now. I’m originally from Croatia and have cooked at restaurants there for over 20 years.

What is your signature dish?

Under the bell.  It’s a special cooking method that you can only get at Dubrovnik.  We cook lamb, octopus, veal or chicken and cook it for hours. The juice stays inside, nothing is wasted. I also roast whole pig or lamb on rotisserie. We get the meat from a butcher at Arthur Avenue. I do need 1-day advance notice for it though.

What do you recommend for Restaurant Week?

I’d start with the risotto. It’s slow-cooked veal risotto that we cook for 10 hours until it’s creamy and finished off with cheese. Then I’d go with Catch of the Day. We cook the fish the traditional way- wood-oven grilled, we don’t use gas. And we pick fresh herbs from our restaurant garden. The Pasta Mama Tereza is also a good choice. It is linguine with mussels, shrimp, lobster and white wine sauce. It’s a great value, you are getting a lot for the price.
